The best source vitamins for vegetarians especially are the Leaf Vegetables. Generally in South India leaf vegetables are used in daal. But for making daal only small amount of leaf vegetables are used. If you want to consume more greens in your diet and especially give more greens to your children, this kind of recipes are needed. In this recipe we are using Green Thotakura/Amaranthus which is rich in antioxidants, proteins, vitamins and minerals which make it a healthy food.

Serves : 2 Persons
Ingredients needed:
Thotakura/Green Amaranthus - 3 cups finely chopped
Onion - 1 medium finely chopped
Garlic - 10 cloves
Toor daal/Khandhi pappu - 1/2 cup
Salt as needed
Spice powder - 2 tsp
Turmeric - 1/4 tsp
Roasted channa daal/Putnala powder
General spices/Thalimpu ginjalu (mustard, jeera, channa daal, urad daal, dry chilly)
Preparation:
1. Cook toor daal in a separate vessel until daal becomes soft (should break easily). Don't cook the daal in pressure cooker as it should not be overcooked and mushy.
2. Heat oil in a pan and add the spices.
3. Add onion and garlic and sauté until onion becomes transparent.
4. Add thotakura/amaranthus, cover the pan and let it cook until the leafy vegetables are cooked (it becomes mushy).
5. Add the cooked toor daal and sauté for a min.
6. Add the Spice powder, salt, turmeric and roasted channa daal/putnala powder.
7. After 2 mins turn off the flame.
Serve the fry with rice or rotis.
